4 medium sized tomatoes – roasted directly on burner, skin removed
3/4 cup finely diced onion
1/2 cup cilantro
1/2 jalapeno pepper, seeded, deveined and chopped finely
2 cloves garlic, finely chopped
3T olive oil
1/4c cider vinegar
Juice of one lime
1. Combine cider vinegar, onions, garlic and let sit for 15 minutes. Add additional ingredients except for tomatoes and cilantro.
2. Prior to serving add chopped tomatoes (seeds removed) and cilantro. Adjust seasonings.
