Ricotta with Green Pea Bruschetta
1. Spread olive oil on slices of baguette
2. Toast baguette until golden.
3. Whiel bread is toasting, cook green peas quickly and mash. Add lemon juice, olive oil and s & p to taste.
4. When bread is toast, remove from toaster while hot and rub each slice with garlic clove
5. Spread each slice with pea mixture and top with dollop of ricotta, drizzle olive oil and serve immediately.
