Popovers
Yields 8-12 popovers
1 c all-purpose
1/2 tsp salt
2 large eggs
1 1/4 c milk
1 tbsp unsalted melted butter
Preheat oven to 450. Grease a popover pan. Whisk together dry ingredients in one bowl and the wet ingredients in another bowl. Gently fold flour mixture into the milk mixture. (Don’t over stir.) Pour mixture into the pan filling each popover cup about 2/3 of the way. If here are any empty cups on your pan fill them halfway with water, so the pan doesn’t burn. Bake for 15 minutes at 450. Reduce temperature to 350 and cook for another 20 minutes until popovers are golden. Serve with fresh butter and a nice assortment of jams.
