Traditional Barbecue Sauce

Makes about 2 1/2 cups
This Kansas City bbq sauce goes great on a fresh roll with pulled pork. Adapted from Steve Raichlen

2 cups ketchup
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
3T brown sugar
2 tablespoons molasses
2 tablespoons prepared mustard
1 tablespoon Tabasco sauce
2 teaspoons liquid smoke
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
1T salt (to taste)

1. Combine the ingredients in a saucepan and slowly bring to a boil.
2. Reduce the heat and gently simmer the sauce until dark, thick, richly flavored, until desired thickness is reached. Stir periodically with a wooden spoon. Let cool before serving.
