Granola
3/4 cup brown sugar (can be partially replaced with maple syrup)
1 stick unsalted butter
3T coconut oil
1T vanilla
1 T cinnamon
1 T nutmeg
1 1/2 t salt
2 quart of quick oats (not instant)
2 c sliced almonds, chopped walnuts
2Tsesame seeds
1 1/2 c dried fruit (currants, raisins, dried cranberries, chia or whatever you like)
- Melt butter, coconut oil, brown sugar, vanilla, cinnamon, nutmeg and salt. Stir and watch carefully to make sure it doesn’t burn. Approximately 5 minutes.
- Mix oats, nuts, sesame seeds with the sugar mixture.
- Bake at 300F degrees. Mix every 20 minutes. Cook for 60 minutes until the mixture takes on a toasted color.
- Remove from oven and mix in dried fruits.
