Fried Matzoh (Matzoh Brie)

Serves 2

4 pieces of matzoh
4 large eggs

Butter for pan

2 tbsp sour cream (optional, to taste)

salt and pepper to taste

Break each piece of matzoh into bite size pieces. Soak in warm water until soft, but not mushy (about 2 minutes). Drain. Beat eggs in separate bowl. Combine with matzoh, stir without breaking up the matzoh too much.

Cook in frying pan.  Start pan on med-high heat and melt butter.  Once coated, added matzoh mixture and lower heat to medium low heat for 8-10 minutes until slightly crisp, but not burnt.

Season with salt and pepper. Add sour cream and enjoy!
