Nonya Chicken Curry
Make with the Roti Jala. Recipe from Bon Ton Resort, Langkawi, Malaysia.
4 cloves garlic, sliced
4 shallots, sliced
2 4-inch pieces cinnamon stick
8 pods of cardamom
4 pieces of clove
4 star anise
1/4c curry powder (orange Malaysian curry powder for meat and chicken)
3c coconut milk
500g chicken breast, (whole chicken breast) cubed
1. Add oil to pan and sauté spices, garlic and shallots until aromatic.
2. Add curry powder and keep stirring. Add 1/4c water. Cook for a few minutes.
3. Add chicken pieces and stir thoroughly. After 4 minutes, add coconut milk and continue to cook until chicken is cooked.
4. Salt to taste.
5. Serve chicken curry in a bowl on a platter surrounded by roti jala.
