Yams with Spiced Honey
1 cup (2 sticks) unsalted butter, room temperature
1/2 cup honey
1 tablespoon robust-flavored (dark) molasses
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Large pinch of cayenne pepper
1T Rosemary, minced
1t sage, minced
8 10- to 11-ounce yams, in 1 inch chunks
Directions
1. Beat butter, honey, molasses, cinnamon, cloves, rosemary, sage and cayenne in medium bowl to blend; season with salt. (Can be prepared 5 days ahead. Cover and refrigerate. Bring mixture to room temperature before using.)
2. Boil yams until tender.
3. Mix yams in the kitchen aid and add compound butter, salt and pepper to taste.
