Chicken Tikka Salad

This chicken salad is really fantastic! Recipe from Bon Ton resort in Langkawi, Malaysia.

Chicken breast in thin slices
75ml plain yoghurt
2t vegetable oil
1/2t turmeric powder
1/2t red chili powder
1 dried Fenu Greek leaf
2 Ajwain (Carom seed)
2t ground fennel
2t ground cardamom
2t ground pepper
2 garlic cloves, chopped
1 1/2cm ginger, chopped
1T ground cashew nuts
1 1/2T flour
1 egg yolk
salt to taste

Yoghurt Dressing
50ml yoghurt
sugar to taste
lime juice to taste
parsley, chopped
salt and pepper to taste

Cucumber, deseeded in sliced in half moons
Cherry Tomatoes, halved
Avocado, sliced
Mint leaves, chopped

Thai sweet chili sauce
Pita bread

1. Mix all marinade ingredients together with chicken. Let marinate for at least 1 hour.
2. Separately prepare yoghurt dressing.
3. Grill chicken.
4. Just before serving, toss chicken together with salad, yoghurt dressing and a small amount of Thai Sweet Chili sauce to taste.
5. Lightly toast pita and serve.

Notes: If sandwich is not going to be eaten immediately, serve the salad separately.
