Cheese Biscuits

These are a favorite at the Albany household. Mrs. Albany makes these every Christmas and they are completely delicious!

2c grated extra sharp cheddar cheese
1c flour
1/2c butter, softened
1t salt
1t ground mustard
1t cayenne

1. Grate cheese in food processor then add remaining ingredients. Mix until it forms a ball. Roll out into logs. Refrigerate for 2 hours or freeze until ready to use.
2. Preheat oven to 375.
3. Slice very thin and put on parchment paper on a baking sheet. Press whole pecans into the top of each biscuit if desired.
4. Bake at 375 for 10-12 minutes until just barely browned.
