My Mom’s Nova Scotia Pancakes

Serves 4

4 large eggs, separated
4 tbsp melted butter
1 1/2 c flour
1 tsp baking powder
1 tsp baking soda
1tsp salt

1 2/3 c buttermilk

In small bowl combine flour, salt, baking powder, salt; set aside.

Beat egg whites stiff; set aside.

Add melted butter to egg yolks.

Add flour combo and buttermilk in yolks alternately.

Then fold in whites gently.

Cook to perfection. Serve with maple syrup (the real stuff!)
