Oyakodon

Our favorite YouTube channel for learning Japanese cuisine is Cooking with Dog.  We had a great time while staying in our rental apartments in Japan working our way through several recipes. This recipes has become a mainstay as the ingredients are available practically everywhere we go.

12 chicken boneless skinless thighs, chopped into bite size pieces
1 large sweet onion (or 2), cut into half moons
1/2 c soy sauce
1/4 c sake
1/4c Mirin
1/4 c sugar
1c dashi
10 eggs, lightly mixed

  1. Add soy sauce, mirin, sugar, and dashi to a 12 inch skillet.
  2. Add onions.
  3. Add chicken pieces.
  4. Cook over medium heat. Turning chicken to cook it evenly.
  5. Pour eggs over simmering chicken.
  6. Cover and allow eggs to just set.
